What is Dressed Weight?
Dressed Weight, also known as carcass weight or hook weight, is the weight of the beast after it has been slaughtered - with the head, hide, hooves, organs and blood removed.
Over the 7-day dry aging period, natural shrinkage occurs. Weight reduction during further processing (butchering) is both expected and essential, as large bones along with trimming of unusable excess fat are removed.
Please note: Your beef purchase is based on the Dressed Weight of the animal. For example, if you’ve purchased a Half Beast with a Dressed Weight of 100kg, this includes all parts of the carcass - bones, meat and fat. As such, you will not receive 100kg of meat cuts.
